Braise 1 large Onion in some oil till soft
Add 1 kg of lamb pieces and 1 tablespoon garlic ginger paste
Add 1 large grated tomato
Add spices (1 tsp cayenne powder/chilli powder, 1 tsp borrie, 2 tsp koljana powder, 1 tsp jeera, 1 tsp barishap, 1 stick cinnamom, 2 pods karamonk) you can add more spices if you like for a spicier akni .)
Let this mixture cook for 15 minutes on stove.
then add 2 quartered potatoes.and some diced carrots if you like.
Cook for further 10 minutes then add 2 cups basmati rice and 2.5 to 3 cups of boiling water. The water must cover all the rice Add half cup buttermilk , a stick of pure butter and fresh koljana.boil a further 5 minutes.
When it goes into the wonderbag there must still be water in the pot. Check picture below.
Leave in Wonderbag for at least 3-4 hours...
NB:Chicken Akhni needs less time on stove.
