Coming from a traditional Indian background we enjoyed this dish very seldomly in our home while growing up but my mom would make a variety of dishes so that we are exposed to different cultures. My dad never cared for it and when this dish was prepared mom always had another small pot of curry on the side. All my siblings loved it and me and my family enjoy it very much especially on cold winter days. This is my rendition of a Kool Bredie.

Before going into WOnderbag
Dinnertime...Served with Fragrant white rice.
This is a favourite among the little ones in my household. Chicken marinated and roasted. Served with roast potatoes and butternut and Sweet Yellow Rice. I am sure the kids would be happy to eat this dish everyday. Check out how i have used my Wonderbag to do this.
The Chicken is marinated in BBQ Spice (Freddy Hirsch Special BBQ is my favourite). Lemon juice, crushed garlic, and some of Amina's Rib Marinade. I suppose you can use anything even some honey or jam to give it a sweet sour, hot taste) . I grilled the chicken in my George Forman ELectric Grill. You an use any griller. But As you can see the George Foreman griller allows all the fat to drip down..- yeah yeah i know i left the skin on naughty me...lol i usually remove the skin.
The Potatoes and butternut i cut into wedges. and spices it up with some bbq spice and fried in a thin layer of oil in the pot.
Veggies nice and toasty
Pack the half done chicken on top of the veggies and seal the pot and cook for further 10 min on stove. Place in Wonderbag for about 2 hrs.
Greetings all. I dont know about you but i Love love love boiled eggs. It is so versatile. Shredded and mixed with mayo and cucumber makes a delicious filling for a sandwich for school. Or plain salt and pepper on the side, a filling and nutritious snack filled with protein. Boiled Eggs are super easy made in the Wonderbag. Before bedtime place your eggs into a pot and cover with tap water. Place the pot onto your stove and bring to boil. Put stove off and place pot into Wonderbag. It just needs an hour or 2. but when you open up your WOnderbag the next morning your eggs will be perfect. The shells are easy to peal off as well. Enjoy.
I never ventured into the kitchen as a teen. Too lazy and disinterested to watch mum work her magic with the delicious indian dishes she cooked. After having to run my own kitchen for many years and trying to mimic her lamb curry i eventually discovered that the secret to get the taste to hers is using only the freshing unprocessed ingredients and in this case fresh garlic ginger paste. My Recipe:
1-2 large Onions chopped and braised in Oil till soft and saucy (VERY IMPORTANT to have onions soft)
Add 1 kg lamb pieces and continue braising for 15 minutes.
Add the following spices : (1 tsp cayenne pepper/chilli powder, 2 tsp Coriander powder, 1 teaspoon cumin powder/jeera, 1 tsp Barishap powder aka Fennel, 1 tsp tumeric, 1 stick cinnacom and 2 cardoman pods)
Add 1 tablespoon Garlic /ginger paste (Homemade is the best)
1 large grated tomato.
Add about 1 tsp Salt to taste
Continue slow cooking on stove for further 10 minutes (Total Cooking time exclusing braising of onions ...= 25 mnutes) Add a handful of chopped coriander and
Place in Wonderbag for a minimum of 3 hours.
1. Add potatoes halfway through cooking,
2. For a richer curry add cream or coconut milk
Enjoy with White braised rice or Naan bread
Oooh this finger licking dish my close friend Zubeida and her lovely kids calls (Strong-enough) "stroganoff...lol..This is a real winner in our household tender cuts of beef folded in with juicy mushrooms and smothered in a peppery creamy sauce. Served with rice of penne or ribbon pasta its the ultimate comfort food..(I know i have many),.Follow my step by step tutorial and you can really wow your loved ones with a creation that takes minimal effort. The best thing about it, you can use cheaper cuts of beef which normally cooks for many hours to get it soft. Now you can save that energy used to cook these cheap cuts of beef in a fraction of the time on stove.
Braise 1 large Onion or 2 small onions, 2 sticks of cinnamon and 2 cardamon pods in a Pot. ( i used a flat large based AMC pot. but any heavy based pot will do . After onions are braised soft add 1 chops yellow pepper/red pepper.
2. Once its well braised ...add about half kilo steak. You can use cheap cuts of beef as well since it will slow cook for several hours.
3. AFter cooking for 20 min on stove (give 30 min for beef pieces ) add 1 punnet mushrooms sliced. and cook for another 5 minutes place in Wonderbag for about 4 hrs. minimum Do not open the pot.
4. Once opened after 4 hrs everything is cooked now you add the creamy ingredient: CREAM half cup will do..If you dont like cream then 1 tablespoon of flour mixed in with some milk will suffice. (Thats what i used ) and just give a quick cook on stove and serve.
Yummy read to eat with white rice or ribbon pasta or penne pasta.
