Today im experimenting with a "have what's in your fridge" type of dish. There was: Beef mince half to 1 kilo washed and braised in an onion Add 1 can of pureed tomato. (Im loving the ease of canned). Add 1 tsp crushed garlic. Add some salt pepper and chillie flakes. I also added sugar to balance the sour of the tomato. Once its cooking i chopped a bunch of spinache leaves. Add half cup cream. Bring to boil. And into Wonderbag while pasta cooks In a seperate pot bring 500g pasta to boil. I used penne pasta. Once cooked al dente drain and add to the creamy mince sauce. Mix it in and top with cheese and bake in moderate oven of 180 till golden brown.

Inspired by Mama's Madina Chicken. Mama makes it on special occasions with lotsa red peppers and fresh tomato. The name, I simply had to change, because the taste doesn't come close to Mama's league, and of course I take too many shortcuts and forget half of the ingredients. It was however enjoyed by the family as a dish i made my own. I wish i could be more creative in naming my dishes though. I contemplated calling it... Tomato Pepper Onion Chicken with salt and black peppper.. lol... Thats about the list of ingredients..
Here Goes: Ingredients 2 large Onions and chopped and braised with 2 large peppers (any colour will do) till golden brown and soft Add 2 allspice and 2 cloves and one crushed clove of garlic or a tsp crushed garlic Add 4 large potatoes quartered Add some water to cook for about 10 minutes Add 1 kg chicken pieces (on bone) Add 1 can of tomatoes peeled and chopped Season with salt , pepper and chillie flakes. Optional : fresh chopped Coriander Cook for a further 10-15 minutes. Place into Wonderbag for about 2-3 hours minimum to slow cook . Serve with fluffy White rice

For months I've been drooling over this beauty but i was waiting for the right bargain to come along. A friend of mine left South Africa for Turkey recently and needless to say this Eetrite Cast Iron Dutch Oven was too heavy to be packed in. I was the lucky one to buy it. Yippee. My first meal was this hearty Beef stew.
Method
1. Braise 1 large onion chopped in some oil and add 1 kg stewing beef pieces. 2. Once meat is browned add salt and pepper and some stock and simmer for 30 minutes. 3. Add quartered potatoes, a few diced carrots and some frozen peas. 5. Place in Wonderbag and allow to slow cook for at least 3 hours. Serve with rice The longer you leave it the more tender the meat becomes.. EnJoY

This year i count myself even more blessed than before, mainly because I drop off all my 4 kids at one school in the morning. Also the best part of this dropoff is that the pre-schooler is escorted by his elder sister to his class so lucky me can come to school in my pyjama pants and noone will know. *teehee*. Jokes jokes.. As always i'm perfectly manicured and dressed at every early morning dropoff even though i have nowhere to be afterward..

When you go camping it is not about a budget holiday but the fact that you leave your routine to have time out and pause. You pause, live and dont let life pass you by. Every moment and discovery is precious. Our family have discovered that camping is a treasure that no fancy hotel destination can ever replace.
We play, we talk , we bake in the sun ,we run and there's not much bathing going on besides in the pool. We smell like smoke most of the time and have severe sugar rush from all the toasted marshmallows. We share the toilets with spiders and other creepy creatures but its all part of the fun. Theres no DSTV. and its bliss. We are minimalist campers and dont own a fancy fridge. The Wonderbags were awesome in keeping our foods frozen all weekend We had our meats frozen in the one bag, frozen drinks in another and our butter eggs and fruits in the 3rd Wonderbag.
